Our expedition commenced in Emilia-Romagna, where the wide, flat ribbons of fettuccini became our first canvas. With meticulous attention to the rich egg-based dough, we uncovered the essence of quality ingredients in the art of pasta-making. The journey then wove through Puglia, Molise, Campania, and Lazio, exploring the secrets of orecchiette, cavatelli, penne, and rigatoni, each shape representing a unique chapter in the vast tapestry of Italian culinary heritage.

While our primary focus was honing pasta-making and versatile dough-making skills, the culinary creativity of our members emerged organically. Empowered with autonomy, each participant crafted their Italian fusion dishes. Imagine teriyaki-infused noodles and a DIY vodka/pesto sauce—innovative creations that surprised me and every other seasoned chef in the room. Despite our club's usual diverse culinary explorations, dedicating a lesson solely to Italy sparked lively discussions about the universal appeal of Italian cuisine in America and other countries.
